
This cheese is an elogy to this lush, fertile "contado" or region, land that has been loved and worked by generations of farmers and dairymen. The cheese is semi-soft, the product of three milks harmoniously blended to give an irresistible flavour. It is surprisingly sweet and fragrant, becoming a little more so every day that passes. A very thin layer of white mould covers its ivory-coloured curd and unique holes.
