Dairy cattle have taken pride of place at the Margaria in Racconigi for centuries. From this age-old tradition we were inspired to create a sweet, soft cheese made from cow's milk. The surface of "La Margaria" cheese is covered with a light white mould and it has delicate straw-coloured flakes that add flavour and intensity.
