This is a robiola (soft) cheese made from a blend of the best cow's and sheep's milk. It has a delicate, rounded flavor, and is rich in aromas and fragrance.
The curd, which is soft and compact, tends to become very creamy after ripening for a short time. Its square shape is reminiscent of the long tradition of peasant cheeses that are still a key trait of Piedmont today.
