Small but boasting a noble and imposing flavour, "Il Principino" is a delicious and unmistakable cow's milk cheese. It has a soft, compact curd, which is slightly straw-coloured. The thin crust is slightly mouldy, with clear signs of a short ripening. The sweet flavour has occasional acid and slightly piquant notes, with light woody aromas.
